and it is heavenly.
Mince is one of those things that I’ve been working
on since becoming a vegan, as when I was a kid
I used to adore spaghetti bolognese and lasagne.
Don’t get me wrong, I’ve been experimenting with
different types of lasagne over the past couple of
years – spinach and courgette has to be one of
the best – but my mince substitutes just weren’t
quite fulfilling the need when I was really craving
an authentic meaty taste.
I tried one recipe which used lentils and carrots,
and while it had the right consistency, it just
didn’t have the flavour; possibly my fault as I think
I needed to add more salt, herbs and spices.
But, I think I might have found the perfect ingredients
in this latest attempt: a mix of mushrooms, along
with lashings of Vegemite, has proven to be the
